Ingredients
1 cup of deveined shrimp, halved
2 cups of fresh walleye or any other white fish, cut into 3 cm cubes
80 g of butter
500 ml of milk
1/4 cup of white wine
500 ml of homemade fish broth
80 g of flour
1/2 tsp of salt
4 pinches of pepper
1 tbsp of chicken broth
Preparation
Prepare the broth: bring 1 liter of water to a boil with the chicken broth. Poach the walleye and shrimp for a few minutes until they are almost cooked.
Melt the butter in a saucepan, add the flour and mix well. Incorporate the milk, white wine, poaching broth, salt, and pepper. Whisk until thickened.
Add the pieces of walleye and shrimp to the hot base. Let simmer gently to finish cooking.
Adjust the consistency with a little broth if necessary.
