After a successful moose hunting season, I found myself with a nice generous amount of meat. So why not take the opportunity to transform a small part of this treasure into delicious snacks to create variety? I had the idea of ââmaking snack sticks, also called pepperettes. pepperettes made from moose meat are not only tasty, but they also celebrate the fruits of our efforts in the great outdoors.
Not having a specific recipe in mind, I decided to appeal to the community by posting a request for suggestions on social media. The responses were many and varied, but one in particular caught my attention. After trying it, I was delighted with the result: a simple, but incredibly delicious recipe.

Moose pepperettes recipe
Ingredients
- 4 lbs ground pork
- 4 lbs ground moose
- 6 tablespoons plus 2 teaspoons seasoningÂ
- 4 tablespoons cured meat (use less than directed on the package for a less salty taste)Â
- 2 cups of water
- Hoses
Preparation
đŽ Mix the pork and moose in a large bowl. In another bowl, mix the seasoning and curing, then sprinkle this mixture over the meat. Add 2 cups of water and mix well for about 5 minutes, until the mixture becomes sticky.
đŽ Using a sausage gun, thread the casing onto the nozzle, then stuff. Place the sausages in a plastic bag and refrigerate for about 12 hours.
đŽ Remove from the refrigerator and let sit at room temperature for 1 hour.
đŽPreheat the oven to 250°F. On a rack covered with parchment paper, arrange your sticks so that they do not touch each other. Cook for approximately 2 1/2 hours with the door slightly ajar, until the internal temperature reaches 165°F. Test using a meat thermometer.
đŽ Cut into sticks and enjoy, or refrigerate, or even freeze for later.
