Phillycheese Steak d’orignal double fromage – Recette de Philippe April-Le Quéré

Phillycheese Steak moose double cheese – Recipe by Philippe April-Le Quéré

This year, I received a bit too much moose fondue meat from my butcher... and rather than making the same Chinese fondue again, I wanted to innovate. So I transformed my slices into a delicious moose Philly cheesesteak. The game meat, seared over high heat, develops a beautiful caramelization that pairs well with the melting onion and the crunch of the pepper. Add to that the richness of provolone, the generosity of mozzarella, and a crispy submarine roll: here is a hunting recipe perfect for reinventing your moose meals after an outdoor outing.

Ingredients

  • 450 g of moose fondue slices

  • Vegetable oil

  • Salt and pepper to taste

  • 1 large onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 150 g of provolone, sliced

  • 150 g of mozzarella, grated (or more provolone)

  • 2 submarine rolls, 9 to 12’’

Preparation

  1. Heat a large cast iron skillet over high heat and add a drizzle of oil. Place the moose meat and season with salt and pepper

  2. Stir every 30 seconds to allow caramelization. Cook about 2 minutes, until the game meat is browned. Remove excess liquid with a paper towel if necessary

  3. Add the onion and cook for 2 minutes. Stir in the pepper and continue for another 2 minutes

  4. Reduce to medium heat, add the provolone, and cover for 2 minutes to melt it

  5. Fill the breads with the mixture, add the grated mozzarella, and broil in the oven until well melted and golden

Quick tip: for a simplified version, skip the mozzarella and double the amount of provolone – a real treat

Substitute meats

If you don't have slices of moose fondue, opt for venison, beef, or pulled pork. With bear, make sure it is fully cooked. A leftover game steak cut into thin slices also works very well.

Questions and answers

  • Can I substitute the moose meat?
Yes, venison, beef, or pulled pork are good options. For bear, thorough cooking is required

The provolone and mozzarella duo provides a melting texture. The aged cheddar or smoked gouda add a more intense flavor

  • How to achieve perfect caramelization of the meat?
Cook over high heat and avoid stirring too much. Remove excess liquid to properly sear the moose pieces

  • Can I prepare the recipe in advance?
Yes, game meat can be cooked in advance and gently reheated before assembling the sandwiches

  • What to serve with this hunting Philly cheesesteak?
Homemade fries, coleslaw, or grilled vegetables are perfect side dishes
