This year, I received a bit too much moose fondue meat from my butcher... and rather than making the same Chinese fondue again, I wanted to innovate. So I transformed my slices into a delicious moose Philly cheesesteak. The game meat, seared over high heat, develops a beautiful caramelization that pairs well with the melting onion and the crunch of the pepper. Add to that the richness of provolone, the generosity of mozzarella, and a crispy submarine roll: here is a hunting recipe perfect for reinventing your moose meals after an outdoor outing.

Ingredients

450 g of moose fondue slices

Vegetable oil

Salt and pepper to taste

1 large onion, thinly sliced

1 green bell pepper, thinly sliced

150 g of provolone, sliced

150 g of mozzarella, grated (or more provolone)

2 submarine rolls, 9 to 12’’
Preparation

Heat a large cast iron skillet over high heat and add a drizzle of oil. Place the moose meat and season with salt and pepper

Stir every 30 seconds to allow caramelization. Cook about 2 minutes, until the game meat is browned. Remove excess liquid with a paper towel if necessary

Add the onion and cook for 2 minutes. Stir in the pepper and continue for another 2 minutes

Reduce to medium heat, add the provolone, and cover for 2 minutes to melt it

Fill the breads with the mixture, add the grated mozzarella, and broil in the oven until well melted and golden
Quick tip: for a simplified version, skip the mozzarella and double the amount of provolone – a real treat

If you don't have slices of moose fondue, opt for venison, beef, or pulled pork. With bear, make sure it is fully cooked. A leftover game steak cut into thin slices also works very well.
