Fajitas à la perdrix

Partridge Fajitas

Prepare your partridge in a Mexican dish and make it a colorful meal to share with friends.

Ingredients

  • 4 partridge breasts
  • 8 corn or wheat pancakes
  • 1 red pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 jalapeno pepper
  • 8 lettuce leaves
  • Tex Mex shredded cheese 
  • 1 tomato, diced
  • 1 sachet Mexican spice mix (Old El Paso)
  • 5% sour cream
  • 1 avocado
  • Olive oil

Preparation

  • Chop the vegetables (peppers, jalapeño and onion). 
  • In a very hot skillet, brown the vegetables in olive oil.
  • Salt, pepper and set aside.
  • Cut the breasts into strips
  • In a very hot skillet, brown the strips with the Mexican seasonings following the instructions on the packet.
  • Slightly heat the patties and garnish them with the strips, vegetables and the rest of the ingredients.
