If you don't have access to bear meat for this recipe, you can use:
- Ground meat from any red game (deer, moose, goose, etc.)
- Cubes of wild turkey breast or partridge (experimental choice!)
Ingredients
- 1 tablespoon of vegetable oil (or bear fat)
- 3 lbs of ground bear
- Salt
- 3 cloves of garlic, chopped
- ¼ tsp cumin (or double if you like a chili that tastes spicy)
- ¼ tsp paprika (or double if you like a chili that tastes spicy)
- ½ tsp chili powder (or double if you like a chili that tastes spicy)
- ¼ tsp oregano (or double if you like a chili that tastes spicy)
- ½ lb white mushrooms, finely diced
- 1 cup corn kernels, drained
- 2 cups of beef or game broth
- 1 can of diced tomatoes
- 1 can of tomato puree
- 2 chopped chipotle peppers (optional)
- 1 green bell pepper, diced
- 1 can of red kidney beans, drained
Preparation
- Heat a large pot over medium-high heat. Add the oil and cook the ground bear meat until fully cooked.
- Add the salt, garlic, cumin, paprika, chili powder, oregano, mushrooms, and corn. Continue cooking for 5 minutes, stirring occasionally.
- Deglaze the bottom of the pot with the beef broth. Add the can of diced tomatoes, the can of tomato puree, and the chipotle. Bring to a boil, then reduce the heat and let simmer for 15 minutes.
- Add the green bell pepper and red kidney beans. Cover the pot and let simmer for another 10 minutes./span>
