After a successful moose hunting season, I found myself with a nice generous amount of meat. So why not take the opportunity to transform a small part of this treasure into delicious snacks to create variety. I had the idea of ​​making snack foods on a stick, also called pepperettes. Pepperettes made with moose meat are not only tasty, but they also celebrate the fruits of our efforts in the great outdoors.

Not having a specific recipe in mind, I decided to appeal to the community by posting a request for suggestions on social media. The responses were many and varied, but one in particular caught my attention. After trying it, I was delighted with the result, a simple, but incredibly delicious recipe.

A small box that allowed me to make delicious snacks on sticks at home with my game, an easy and economical format that contains cured meat, seasoning, collagen casings and instructions. A product of the company Hi Mountain authentic Wyoming seasonings.


Moose Pepperettes Recipe

Ingredients

  • 4 lbs ground pork
  • 4 lbs ground moose
  • 6 tablespoons plus 2 teaspoons seasoning 
  • 4 tablespoons cured meat (use less than directed on the package for a less salty taste) 
  • 2 cups of water
  • Hoses

Preparation

Combine pork and moose in a large bowl. In another bowl, mix the seasoning and curing, then sprinkle this mixture over the meat. Add 2 cups of water and mix well for about 5 minutes, until the mixture becomes sticky. Using a sausage gun, thread the casing onto the nozzle, then stuff. Place the sausages in a plastic bag and refrigerate for about 12 hours.

Remove from the refrigerator and let sit at room temperature for 1 hour.


Preheat the oven to 250°F. On a rack covered with parchment paper, arrange your sticks so that they do not touch each other. Cook for about 2 1/2 hours with the door slightly ajar, until the internal temperature reaches 165°F. Test using a meat thermometer.

When finished, cut into sticks and enjoy, or refrigerate, or freeze for later. To preserve the prepared quantity and make different snack-style portions or family portions, I used vacuum packaging.

These pepperettes are ideal for small snacks during outings in nature. They are easily shared with friends, can be used in a variety of skewers, or added to a charcuterie and cheese platter for a joyful feast. Perfect for buffets or according to your inspiration!
